Fresh King Salmon

King Salmon begin there journey up the Copper River May thru the month of June. These are the richest of the Copper River salmon, and the biggest, with fish 50 to 60 pounds not uncommon. They are also the least available as they are harvested in low numbers. Their oily, orange flesh is the most sought after of the Copper River salmon and commands the highest price.

They will be available in very limited quantities dependent on fishing opener schedules and catch numbers from mid May thru June. Prices will change with the price on the fishing grounds, the highest price on the first opener in May, then slowly dropping as the season progresses. My Kings are handled with utmost care, live bled, and slush iced for maximum quality.

Fresh King Salmon will be gilled and gutted with head on. This type of cut allows buyers to freely cut there salmon any way imaginable.

Butterfly steaks seared in a hot pan with our favorite seasoning, smoked heads and collars on the grill, chowder, backbone scrapings for our breakfast scrambles, sashimi and gravlocks. These are a few of our family favorites.
